DIY Mango Cake

Mango cake made from mango pulp is a rich and flavorful dessert that highlights the natural sweetness of ripe mangoes. Step by Step Recipe for Mango Cake

Single kit makes 3 batches

Servings: 10 slices

INGREDIENTS

CAKE

180 gms whole wheat flour

1 teaspoon baking powder

½ teaspoon baking soda

100 gms butter

200 gms condensed milk

265 gms mango pulp

37.5 gms sugar

1 tsp vanilla extract


ICING

50 gms mango pulp

120 ml whipping cream

15.62 gms icing/powdered sugar

INSTRUCTIONS

  1. Sieve the whole wheat flour, baking powder and baking soda in a bowl. Keep the sifted dry ingredients aside.

  2. Grease your loaf pan with butter/oil and keep aside.

  3. Add 3-4 tablespoons of sugar along with the mango pulp in a blender and blend till it becomes smooth. Depending on the sweetness of the mangoes and your preference, adjust the sugar accordingly.

  4. Preheat the oven to 180 degree celsius 15 minutes before you start baking.

  5. Take butter in a pan and melt it on a stovetop on low heat or microwave it.

  6. Add condensed milk in the melted butter and stir very well with a balloon whisk, stir till the texture is smooth.

  7. Now add the mango puree and vanilla extract. Stir till it gets smooth.

  8. Add the sifted dry ingredients. With light hands gently fold the mixture with a spatula, Avoid folding too much.

  9. If the cake batter looks extremely thick then just add a few tablespoons of milk

  10.  Put the batter in the loaf pan, make it even and tap it to remove all the air bubbles.

  11.  Bake the cake for 40-50 minutes. Check with a wooden skewer if it has baked completely. The skewer should come out clean.

  12.  For the icing, take whipping cream in a bowl along with sugar. Begin to whip the cream. Whip till soft peaks

  13.  Then add the mango puree, blend at a low speed till everything is mixed well.
