DIY Mango Phirni

Mango phirni is a creamy, fragrant rice pudding infused with the vibrant flavor of ripe mangoes. Made by simmering ground rice in milk and sugar, it's delicately flavored with cardamom and topped with fresh mango puree. The smooth, thick texture is complemented by the natural sweetness of the mangoes, making it a refreshing twist on traditional phirni. 

Step by Step Recipe for Mango Phirni

Single kit makes 3 batches

INGREDIENTS

Kesar Mango Pulp: 400 gms 

Basmati Rice: 65 gms

Sugar: 150 gms 

Cardamom Powder: ¾  tsp 

Saffron: A pinch 

Milk: 3 litre 

Water: for soaking

INSTRUCTIONS

  1. Add a pinch of saffron to the milk and stir well.

  2. Soak the basmati rice for 30 minutes. Discard the water and blend rice to coarse paste. Keep aside 

  3. Now in a large kadai boil the milk, stir occasionally and simmer for 10 minutes. Keep the flame low or till milk thickens.

  4.  Now add in prepared coarse rice paste. Stir continuously for 5 minutes or else lumps will form. Simmer for another 5 minutes stirring in between. Boil the milk till the rice gets cooked completely. 

  5. Further add sugar and saffron milk. Mix well till the milk thickens and turns creamy. 

  6. Allow the phirni to cool completely. Now add the mango pulp and mix well. Add more pulp depending on the sweetness 

  7. Add in cardamom powder and serve chilled with chopped nuts.
