DIY Mango Pudding

Step by Step Recipe for Mango Pudding
Single kit makes 2 batches
INGREDIENTS
Alphonso Mango Pulp: 400 gms
Sugar: 45 gms
Agar Agar Strands: 2 tbsp finely chopped
Coconut Milk: 200 ml
Water: 80 ml water
INSTRUCTIONS

Put the mango pulp and sugar in a blender and blend until smooth. Set aside.

In a small pan, take the agar agar strands. Chop the strands as small as possible for it to dissolve properly.

Add water. Keep the pan on low to medium low heat

Gently begin to heat this agar agar+water mixture. Keep stirring in intervals.

Let it come to a boil. When it is boiling, keep on stirring so that the strands are dissolved properly in the water. Once the strands are dissolved, you will see a smooth jelly like liquid.

Wait for 20 seconds and add the agar agar solution in the jar containing mango puree.

Add coconut milk and blend again till smooth.

Pour the pudding in bowls, cover with a lid or aluminium foil. Refrigerate and let it set for 4-5 hours or overnight.
